This is a healthy vegan dessert with just a hint of natural sweetness. Perfect for an after dinner treat!
1 cup uncooked brown rice
2 1/3 cups water
2 cups coconut milk
4 ripe bananas
1 teaspoon vanilla extract
3 tablespoons flour (you may substitute gluten free flour as well)
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/3 cup unsweetened shredded coconut or coconut flakes
Put the brown rice in water in a pot, and cook for 30 minutes, stirring occasionally. While the rice is cooking, whisk the flour, vanilla extract, and coconut milk together in a medium bowl until it is smooth. Once the rice has finished cooking, drain any additional water and add the coconut milk mixture, allspice, and cinnamon to the pot. Continue stirring occasionally until the pudding has thickened considerably. This should take about 15 minutes. Mash three bananas and stir them into the pudding mixture in the pot.
Move your pudding to a serving plate or bowl, and cover with plastic wrap until the pudding is completely covered. Place in refrigerator to chill for 2 hours. When you are ready to serve, chop up your remaining banana and place around the pudding. Add the shaved coconut slices to the top of the pudding. Serve and Enjoy!
