This delicious and healthy salad is perfect for these warm autumn nights. Simply sautee some cabbage, ginger, garlic, and yellow squash together to make a light salad that is sure to leave you glowing, inside and out.
2 cups of shredded green cabbage
2 cups of shredded red cabbage
2 tablespoons of freshly grated ginger
3 cloves of finely chopped garlic
2 tablespoons of olive oil
1 teaspoon of cumin
1 teaspoon of ground pepper
Cut the squash into bite-sized pieces, and set aside. Mix the garlic, ginger, cumin, and ground pepper in a bowl with the olive oil. Add the squash and mix well. Sautee on medium heat until squash is lightly browned (about 5-7 minutes). Remove from heat and mix in a large bowl with the red and green cabbage. Serve warm or place in refrigerator to cool.
