2 medium sized zucchinis
2 cups of shredded carrots
1 clove of garlic, finely chopped
1 tomato, chopped
1/4 cup chopped walnuts to garnish
Cut the tops off the zucchini, and set aside. Sauté the carrots, tomatoes, and garlic in olive oil on medium heat for 6-7 minutes. Stir often. While these vegetables are cooking, grate your zucchinis using the largest holes on your grater to create thin slices. Add your zucchini slices to the sauteed vegetables, and cook for an additional minute while stirring. Remove from heat and add chopped walnut pieces for garnish. Serve and enjoy!
