Inspired Zucchini with Shredded Carrots and Garlic

IMG_1891-e1416521824948-300x225Never worry about getting your daily dose of vegetables again! Simply grate your favorite vegetables into thin slices, creating tasty extremely healthy dishes. So easy and delicious, you’ll want to have it every night! The zucchini gives you the experience of eating pasta, but without any of the negative health effects.

2 medium sized zucchinis
2 cups of shredded carrots
1 clove of garlic, finely chopped
1 tomato, chopped
1/4 cup chopped walnuts to garnish

Cut the tops off the zucchini, and set aside. Sauté the carrots, tomatoes, and garlic in olive oil on medium heat for 6-7 minutes. Stir often. While these vegetables are cooking, grate your zucchinis using the largest holes on your grater to create thin slices.  Add your zucchini slices to the sauteed vegetables, and cook for an additional minute while stirring. Remove from heat and add chopped walnut pieces for garnish. Serve and enjoy!
